Banana Fritters

Ready in:  less than 30 minutes

Ingredients:

4 over-ripe bananas
1 cup sifted flour                                                                                                                                                                                                                                        1/4 cup flour
2 teaspoons double-acting baking powder
1 teaspoon salt
1/4 cup sugar
1 egg, well-beaten
1/3 cup milk
2 teaspoons margarine
Directions:

Sift dry ingredients together. Combine egg, milk and margarine and  add to dry ingredients and mix until batter is smooth.

Peel bananas, cut into 3 to 4 diagonal pieces and roll in 1/4 cup flour to coat.

Dip into fritter batter, making sure each piece is well-coated.

Deep fry until golden brown.

Serve hot.
